Takoyaki Recipe
Now the ultimate snack from Japanese streets, in your home. Have a takoyaki party this weekend at your home!
Ingredients
Takoyaki Mix
- Large eggs - 3 - Lightly beaten
- Soy sauce - 2 tablespoon
- Cold water - 4.25 Cups
- Salt - 1/2 tablespoon
- Instant dashi - 2 tablespoon
- All purpose flour - 2.5 Cups - about 300g
Takoyaki Filling
- Boiled octopus 0.5" cubed - 1/2 lb
- Tempura bits or rice krispies - 1 Cup
- Green onions sliced - 1 bunch
- Shredded or cubed cheese - if desired
- Beni shoga/pickled ginger - if desired
Takoyaki Toppings
- Mayo - Preferably Japanese/Kewpie Brand
- Takoyaki sauce
- Bonito flakes
- Aonori or seaweed strips

Preparation:
Step 1:
Beat the eggs and add the water and stock grains. Add the egg- water- dashi mixture to the salt & flour and mix well. Heat-up your pan and oil the individual chambers with a oil brush or use a paper tissue dipped in oil.
Step 2:
When the pan is hot, pour the batter into the individual chambers up to the top. Do not worry if the batter over flows a bit.
Step 3:
Add green onions, tempura bits (or) rice krispies, your protein, ginger, and shredded cheese( if using).
Step 4:
After a while, the bottom of the takoyaki will be cooked through. At this point, you can use a skewer or two to turn them over 90degrees. If you cannot turn the takoyaki easily, it probably needs to cook for a bit longer. If desired, add a bit more batter to the balls to fill them up. Let cook for a min or so and also do another 90 degree turn. The balls will come easier to turn the further they cook.
Step 5:
The takoyaki are done when they are lightly brown and crisp on the outside and they turn fluently in their holes. Overall I ’d say it takes about 10- 15 mins per batch, from launch to finish, depending on how crisp or soft you like your takoyaki.
Step 6:
To serve, place the takoyaki on a plate and drizzle with takoyaki sauce & Japanese mayonnaise. Genrously sprinkle on the bonito flakes and aonori. Enjoy, but be careful, its Hot from inside!
