Delicious Homemade Ras Malai Recipe
Ingredients
- Whole milk - 1 Liter
- Vinegar or Lemon juice - 1/4 Cup
- Sugar - 1 Cup
- Water - 4 Cups
- Green cardamom pods - 4 to 5 (crushed)
- A pinch of saffron strands
- Chopped almonds & pistachios - 2 Tablespoons

Preparation:
Step 1:
Boil the milk in a heavy-bottomed pot over medium heat.
Step 2:
Once the milk comes to a boil, add vinegar or lemon juice slowly and stir gently. The milk will start to curdle.
Step 3:
Turn off the heat and let it sit for a minute.
Step 4:
Line a sieve with a muslin cloth and strain the curdled milk.
Step 5:
Rinse the cheese under cold water to remove the vinegar or lemon juice taste.
Step 6:
Squeeze the cheese to remove excess water and hang it for 30 minutes.
Step 7:
After 30 minutes, knead the cheese well until it is smooth.
Step 8:
Divide the cheese into small equal-sized balls and flatten them slightly.
Step 9:
In a separate pot, add sugar, water, crushed cardamom pods, and saffron strands.
Step 10:
Bring the mixture to a boil, stirring occasionally.
Step 11:
Add the flattened cheese balls to the boiling mixture and cover the pot with a lid.
Step 12:
Cook the cheese balls in the boiling mixture for 10-12 minutes or until they are soft and spongy.
Step 13:
Turn off the heat and let the ras malai cool in the syrup.
Step 14:
Garnish with chopped almonds and pistachios.
Step 15:
Serve the delicious homemade ras malai chilled.
