Baked Feta Pasta
The so Popular Baked Feta Pasta (Tiktok Pasta)! It's an amazing dish with roasted tomatoes, lightly & creamy tangy baked feta, al-dante pasta, and fresh herbs. One of the easiest & tastiest recipes!
Ingredients
- Dry pasta - 10 oz. (bite size)
- Garlic cloves, peeled and halved - 5 medium
- Spinach, roughly chopped - 8 oz.
- Ground black pepper & Salt
- Grape tomatoes - 2 pints (20 oz)
- Extra-virgin olive oil - 1/2 Cup
- Thinly sliced fresh basil - 1/4 Cup
- Crushed red pepper flakes - 1/4 teaspoon (or more to taste)
- Block feta cheese - 7 oz. (drained)(sheep’s milk variety)
- Fresh parsley - minced - 2 Tablespoon
Preparation:
Step 1:
Preheat oven to 400 degrees.
Step 2:
Add tomatoes, feta, & oil to baking dish. Add garlic & grape tomatoes to a 3 quart baking dish. Toss with few pinches of salt & olive oil. Place feta in the center of tomatoes and turn to coat with oil.
Step 3:
Bake in center of preheated oven for 30 minutes.
Step 4:
Then remove the baking dish, raise oven rack up to upper 1/3 of oven. Return baking dish to oven & increase oven to 450 degrees. Bake until cheese & tomatoes are starting to slightly brown, about 10 mins longer.
Step 5:
Cook pasta: Meanwhile boil pasta to al dente in salted water. (I use about 3 or 4 quarts of water & 1 Tablespoon salt), according to time listed on pasta package.
Step 6:
Save some pasta water, cook spinach: Reserve 1/2 mug pasta water and right before draining pour and submerge spinach in with the pasta (it should wilt nearly instantly). Drain pasta and spinach.
Step 7:
Mix feta mixture: Smash the feta, garlic oil & tomatoes together with the back of a wooden spoon.
Step 8:
Add herbs & pasta: Toss pasta with mixture along with parsley, red pepper, basil and flakes.
Step 9:
Thin and season: Thin mixture with a few tablespoons of pasta water at a time to reach desired consistency. Season with pepper & salt to taste. Serve warm.
