Ingredients
For Pizza:
- Vegetable oil - 1 cup
- Shredded Mexican cheese blend - 2 cups
- Ground beef - 1 pound
- Taco seasoning - 1 packet
- Tortillas (taco size) - 8 flour
- Water - ¾ cup
- Can enchilada sauce - 10 ounce
- Can refried beans - 15 ounce
Toppings:
- Sliced green onions
- Diced tomatoes
- Sliced olives
Preparation:
Step 1:
Preheat oven to 400F. In a large skillet, deteriorate & brown and crumble the ground beef.
Step 2:
Drain redundant grease. Place cooked beef back in skillet and add water & taco seasoning packet and stir. Bring to a boil, then reduce heat and simmer until thickened.
Step 3:
Strain out the mint leaves, add sugar:
Strain the milk cream mixture into a separate bowl, pressing against the mint leaves with a rubber spatula in a sieve to get the most liquid out of them. Return the milk cream mixture to the saucepan. Add salt & sugar to the mixture. Heat until just steaming again, stirring until sugar dissolved. Remove from heat.
Step 4:
In a large skillet, heat up oil over medium heat. Add tortillas( one at a time) and cook for 3- 4 mins( flipping constantly) until crisp. Continue with the rest of the tortillas. Set away.
Step 5:
Meanwhile, heat-up the refried beans in a microwaveable-safe bowl. This will make it easier to spread beans onto the tortilla shells.
On each tortilla, slather a generous layer of refried beans. also top with seasoned ground beef.
Step 6:
Place another tortilla on top. Slather about two tablepoons of the enchilada sauce on top. also place some shredded cheese on top of the sauce. Continue assembling the rest of the pizzas.
Step 7:
Place the pizzas on a large nonstick baking sheet and bake for about 8- 10 mins, until cheese is melted. Serve with your favoriet toppings!
