Paneer Butter Masala Recipe
One of the Premium Punjabi curries, if not the king of the paneer curries.
Ingredients
for paste of Masala :
- Butter - 2 tablespoons
- Oil - 2 Tablespoons
- Tomato - 3 (sliced)
- Clove garlic - 2
- Cloves - 5
- Cardamom - 2 Pods
- Onion (sliced) - 2
- Cashew - 15
- Ginger - 1inch
for Curry:
- Paneer - 16 Cubes
- Onion - 1 (finely chopped)
- Turmeric - ½ teaspoon
- Oil - 2 Tablespoons
- Salt - 1 Teaspoon
- Butter - 2 Tablespoons
- Bay leaf - 1
- Chilli - 1
- Chilli powder - 1 teaspoon
- Cumin powder - ¼ Teaspoon
- Coriander powder - ¾ Teaspoon
- Garam masala - ½
- Water - 1 Cup
- Cream - 2 tablespoon
- Kasuri methi - 1 teaspoon
- Coriander - 2 tablespoons (finely chopped)
Preparation:
Instructins for Gravy base:
Step 1:
Firstly, in large Pan heat 2 tablespoons oil & 2 tablespoons butter.
Step 2:
Add 2 pods cardamom, 5-cloves & saute on low flame, till it turns aromatic.
Step 3:
Now add 2 clove garlic, 2 onion, & 1 inch ginger.
Step 4:
Saute till onions shrink slightly.
Step 5:
Further add 15 cashew, 3-tomato & saute for 2 mins.
Step 6:
Cover & boil for 10 mins, or till tomatos softens.
Step 7:
Cool completely & transfer to blender & blend to smooth paste.
Step 8:
Pass curry to filter to get rid of skin & seeds.
Step 9:
Smooth & silky, the tomato onion paste is ready. keep it aside.

Keeping flame on low, add 1 teaspoon chilli powder, ½ teaspoon turmeric, ¾ teaspoon coriander powder, ½ garam masala, ¼ teaspoon cumin powder & 1 teaspoon salt.

Saute till spices turn aromatic. Make sure not to burn the spices.

Add in prepared onion-tomato paste & mix it well.

Now add 1-cup water & mix well adjusting consistency.

Simmer for 5 mins, or till the paneer absorbs flavour.
