Ingredients
- Ground coriander - ¾ Tablespoon
- Garlic powder - ¾ Tablespoon
- Ground cumin - ¾ Tablespoon
- Turmeric powder - ¾ Tablespoon
- Paprika - ¾ Tablespoon
- Ground cloves - ½ Teaspoon
- cayenne pepper - ½ Teaspoon (more if you prefer)
- Boneless, skinless chicken thighs - 8
- Large onion, thinly sliced - 1
- Large lemon Juice - 1
- Salt (As required)
- Private Reserve extra virgin olive oil - ⅓ Cup
To Serve
- Pita pockets - 6
- Baby arugula
- Tahini sauce or Greek Tzatziki sauce
- 3-ingredient Mediterranean Salad
- Pickles or kalmata olives (optional)
Preparation:
Step 1:
In small bowl, combine turmeric, cumin, coriander, sweet paprika, garlic powder & cloves. Set away the shawarma spice mix for now.
Step 2:
Pat chicken thighs dry & season with salt on both sides, then thinly slice in-to small bite sized pieces.
Step 4:
When ready, pre-heat oven to 425degrees F. Take chicken out of fridge & let it sit in room-temperature for few mins.
Step 5:
Spread marinated chicken with onions in one layer on large lightly oiled baking sheet-pan. Roast for 30mins in 425 degrees F heated oven. For more crispier, browned chicken, move the pan to top rack & broil very briefly (watch carefully). Remove from oven.
Step 6:
While chicken is roasting, prepare pita-pockets. Make tahini-sauce according to this recipe or Tztaziki sauce. Make 3ingredient Mediterranean salad. Set-aside.
Step 7:
To serve, open pita-pockets up. Spread a little tahini sauce or Tzatziki sauce, add chicken shawarma, Mediterranean salad, arugula & pickles or olives, if you like. Serve immediately!
